Spotlight: One Well Brewing

With fresh, local ingredients, frequent specials, gluten-free options, and an ample vegan selection, what’s not to love about One Well Brewing? Word on the street was that One Well had expanded their vegan menu. We had to learn more! The VegOut team gathered with cameras, notepads, and hearty appetites to sort through grilled cheez sandwiches, nachos, quesadillas, pizzas, paninis, ales, and lagers. It was tough, but somebody had to do it.

In our previous article, we noted that all One Well beers are vegan-friendly, making this a great place to head with friends. Enjoy pinball, board games, conversation, and funky vibes in addition to some freaking delicious food. You won’t find the typical bar options at One Well. Menu items are unique, seasonal, and chef-inspired.

We had the pleasure of digging into the “Go Cluck Yourself!”. Excuse me? On the menu, this sandwich is served with chicken, hence the name, but our vegan version was filled with pico de gallo, guacamole, vegan cheese, and vegan bacon. We also tried the “Steady Teddy”, a delicious BBQ pulled jackfruit sandwich served on toasted bread, with cilantro lime slaw, chips, and a pickle. Last but not least, we enjoyed the “Veggin Out” quesadilla. True to its name, this dish was full of zucchini, summer squash, eggplant, roasted peppers, spinach, avocado, and vegan cheese. One Well offers the option of upgrading this ‘dilla with vegan protein, but we chose to stick with the veggies in all their glory. One Well offers another quesadilla option called the “STFU”. This Tex-Mex favorite is stuffed with roasted poblano salsa, avocado, spinach, vegan cheese, and upon request, vegan protein. Loving the vegan cheese theme? One Well also offers another cheesy dish, “The Grilled Cheese Incident”. This classic is filled with spinach, artichoke, and vegan cheese. What more could you want?

If you’re looking for a snack, try the “Mister Nibblers”. This dip trio consists of salsa, hummus, and guacamole paired with crispy tortilla chips. Other vegan appetizers include a hummus platter called the “DO!” served with chips and veggies, and the “It's Mine”, an overflowing platter of nachos topped with colby jack vegan cheese, black beans, jalapeno, onion, lettuce, tomato, black olives, and chives: all the traditional fixins with vegan protein upon request.

One Well serves an array of veganizable salads as well including: “Grandpa’s Fruits,” “Benevolent Dictator,” and “But Wait There’s More!”. All salads can be served with vegan cheese and vegan protein upon request. Per One Well staff members, the vegan protein options tend to rotate, but include: bacon, chorizo, tofu, Tofurky, jackfruit, and chick’n. We love the vegan protein variety and inclusive menu!

Also good to know is that you won’t pay more for entrées if you choose to order something without the meat. You chose an entrée. You took out ingredients. It should cost less! One Well understands. One Well charges less. If it doesn’t have chicken, it shouldn’t cost the chicken price. Thanks, One Well, for rocking that business!
