Pierce Cedar Creek Institute is a nature center that provides environmental education programs and seasonal recreation including nine miles of public hiking trails. This gorgeous venue offers many unique activities and events including exquisite monthly brunches.
Although we had familiarized ourselves with the menu ahead of time, we were overwhelmed and delighted by the amount of vegan offerings available at the various stations. The salad station was packed with delicious fruit and vegetable creations including Grapefruit-Marinated Veggie Salad, a VegOut favorite. We also enjoyed fresh fruit, mixed greens, and a Cannellini Bean-Artichoke Heart Salad with house-made vegan feta cheese.
The breakfast station housed a delicious breakfast hash made with Nutcase Vegan Breakfast Sausage. Check out more information on our favorite Grand Rapids-based meat alternative here. Blueberry Steal-Cut Oats also made the cut along with vegan Pigs in a Blanket and Butternut Squash Bacon. Yup, you heard it right. We’re talking crispy, salty, smoky, vegan bacon-y goodness. Naturally this was a VegOut favorite and fueled much discussion for the other brunch-goers at our table.
We all know it’s not quite brunch without an omelet station. Chef Paul hooked us up with a delicious combination of vegan herbed fetta, Nutcase sausage, and olives among other veggies encased in a vegan egg mixture. Check out our previous piece on Paul V here. The brunch also included a waffle station with fruit compote and vegan coconut whipped topping. Yum! While we’re on the topic of sweets, we can’t go without mentioning the dessert table. We enjoyed chocolate-covered strawberries, chocolate croissants, and chocolate-raspberry cupcakes. Are you sensing a trend here?
Monthly brunches are offered on the second Sunday of each month, with some exceptions. Check out the upcoming events Pierce Cedar Creek Institute has to offer and if you’re interested in the brunch, be sure to register early. It fills up fast, and for good reason!
