Want to surround yourself with a group of like-minded souls? Want to socialize with individuals who understand why you make the choices you make when it comes to what you put on your plate? Check out the meet-up events of Vegan Kalamazoo (VK). Vegan Kalamazoo is a “supportive social and learning environment for those following, or interested in, veganism or a plant-based diet.” All are welcome at VK events—vegans, vegetarians, and the veg-curious. You are welcome, as well, whether you choose a plant-based diet for environmental, health, or animal rights reasons. Vegan Kalamazoo is warm, inviting, and happy to educate or inform if you need help along your vegan journey.
On Monday we attended a VK dinner party held at Fieldstone Grill. Fieldstone did a fabulous job creating a special vegan menu just for this event. A Roasted Sweet Potato Bisque started off the meal followed by a delicious choice of entrées. We went with the Fall Harvest Salad, a bed of kale and spinach topped with roasted acorn squash, sliced red apples, and dried cranberries and candied pecans, all drizzled with a house-made pumpkin vinaigrette. Beautiful. Delicious. Nutritious. We were very pleased. Other entrée options included Balsamic Grilled Portobello, Asian Spiced Jewel Yam Curry, and Roasted Butternut Squash Quinoa Salad. As if all this weren’t enough, we finished the meal with a gorgeous slice of Pumpkin Spiced Vegan Cake with roasted red apples. And just to add, the conversation was as delicious as the meal.
We met many new faces and heard many interesting stories. It was nice to be surrounded by folks who have experienced similar struggles, overcome similar obstacles, and enjoyed similar successes as have we.
