Restaurant Spotlight: Coexist Café

Coexist Café has added two new vegan sandwiches to their menu. Available for a limited time and sure to please, these are the creation of Chef Chad Drumhiller. 

Chad shared with VegOut his desire to provide vegan options that are unique and beautiful in both taste and presentation. He seeks to provide a nutritionally complete meal, incorporating a protein of some sort, and providing a satisfying taste experience. Co-owner of Brite Eyes Brewing Co., Drumhiller also will soon be opening The Tasting Room at Salut Market on S. Westnedge. Having worked under various local chefs, he currently helps Coexist keep at least one, and often more, vegan options on the menu board. 
Try his Kzoo Vegan. With roasted red peppers, artichoke hearts, spring mix, shallots, balsamic, and hummus on a torta, this sandwich is a new VegOut favorite. We were also taken with the Porto My Bella. Grilled portobella, spring mix, tomato, and Dijon mustard on a torta make this a go-to for those who enjoy a sandwich with an Italian flair.

Coexist Café is located at 2901 Howard St. and is open 8am-10pm Monday through Thursday and 8am-8pm Friday through Sunday.
